Cooking Instructions
For Savory Sorghum Vermicelli Upma:
- Boil 1 cup of Sorghum Vermicelli in 3 cups of water for 3-4 minutes. Drain and set aside.
- Heat 2 tbsp oil in a pan, add mustard seeds, curry leaves, chopped onions, and green chilies. Sauté until golden brown.
- Add finely chopped vegetables like carrots, beans, and peas. Cook until soft.
- Mix the boiled vermicelli into the cooked vegetables, season with salt, and stir well.
- Garnish with coriander leaves and a squeeze of lemon juice. Serve hot.
For Sweet Sorghum Vermicelli Payasam:
- Roast 1 cup of Sorghum Vermicelli in ghee until lightly golden.
- Boil 2 cups of milk (or coconut milk) and add the roasted vermicelli. Cook until soft.
- Add ½ cup of jaggery or sugar and a pinch of cardamom powder. Stir well.
- Garnish with roasted cashews, raisins, and a sprinkle of saffron. Serve warm or chilled.
