- Boil 1 cup of Mappillai Samba Rice Vermicelli in 3 cups of water for 3-4 minutes. Drain and set aside.
- Heat 2 tbsp oil in a pan, add mustard seeds, curry leaves, chopped onions, and green chilies. Sauté until golden.
- Add vegetables like carrots, peas, and beans. Cook until tender.
- Mix the boiled vermicelli into the vegetables, season with salt, and stir well.
- Garnish with fresh coriander leaves and serve hot.
For Sweet Vermicelli Payasam:
- Roast 1 cup of Mappillai Samba Rice Vermicelli in ghee until aromatic.
- Boil 2 cups of milk and add the roasted vermicelli. Cook until soft.
